Before You Start Baking

A good tasting cookie needs proper preparation before it goes into the oven. Take time to read the recipe and make sure you have all the necessary ingredients before starting.

Measure Your Ingredients

Measure all of your ingredients before you start making the dough. Take care when measuring as slight changes to the recipe can alter the taste, or change the consistency.

Weigh the Dough

If you want each cookie to bake the same, you’ll need to measure every individual dough squares. This will take longer but will result in even baking.

Use a Proper Pan

The best pan to put your treats on is made of shiny aluminum. A dark pan will absorb more heat which could lead to burning the bottom of your cookies. Make sure that the pan is cool before you place the cookie dough on it. If the pan is already warm, it will heat up quicker than the recipe’s designated baking time. Finally, don’t use a pan that is too large for your oven. Try and have at least a 2-inch gap between your pan and the walls of the oven.

Give your Cookies some Room

When the dough bakes in the oven, it will expand. To avoid having cookies that are joined together, leave room between your dough. Two inches is recommended.

Grease with Solid Shortening

To grease your pan, use solid shortening instead of butter, margarine, or sprays. Butter may cause the cookies to cook too quickly, resulting in burning, and sprays can sometimes cause your cookies to stick to the pan.

Preheat the Oven

Unless the recipe calls for putting your cookies into a cold oven, always preheat before you start baking. Use an oven thermometer to make sure your oven is at the recommended temperature.

Timing is Everything

It is very important that you accurately measure how long your cookies have been in the oven. Purchase a quality timer or use the timer on your microwave.

Stay near the Kitchen

Even though you’ll hear the beeping sound from your timer when the desserts are done, that will not help if you have a long walk to the kitchen. Those extra 30 to 60 seconds could result in burnt cookies.

Check your Cookies

If your oven has a window that allows you to check without opening the oven, take advantage of that feature to monitor your baking. Also, once you reach the minimum baking time, open the oven to see exactly how your cookies are baking.

When your Cookies are Finished

Your cookies are done baking when they are golden brown on top or look as directed by the recipe.

Remove Cookies from the Pan

Unless your recipe calls for leaving the cookies on the pan after baking, take your treats off the pan immediately so that they don’t continue to bake. Put them on a wire rack. Removing the cookies immediately also prevents the cookies from sticking to the pan as they cool.

Use a Pancake Turner

Your cookies are still moist right after they come out of the oven. To scoop them off the pan, use a pancake turner.

Proper Storage

Unless you are going to eat all of the cookies after they cool, you will need to properly store your cookies to keep them fresh. Using a cookie jar is not recommended since air gets into the jar. Instead, use containers that are airtight.

To make cookies that are chewier, take the cookies out of the oven a few minutes before they are done. Then let them sit on the pan a few minutes before transferring them to the wire rack.

Make Cookies Crispier

If you prefer crisp cookies, use butter instead of margarine and leave the cookies on the pan for one minute before putting them on the wire rack.

A tip to help you make flat cookies is to warm the dough to room temperature before you place the dough in the oven.
