Simple Cooking Substitutions
Baking Powder Substitute
Out of baking powder? Simply substitute a blend of one half baking soda and one half cream of tartar for the same results.
High Fiber Flour Cooking Substitution
Increase the fiber in your baked goods by substituting ground up oats or whole wheat flour for one third of the white flour.
Chicken Stock Instead of Oil
Use chicken stock to add flavor, without adding fat, when you sauté your vegetables. You can also blend into chicken stock into mashed potatoes as a cooking substitution for milk.
Use Applesauce Instead of Oil
When baking, you can often substitute unseasoned (don't use the cinnamon type) applesauce for part of the cooking oil your recipes call for -- usually 1/3 to 1/2 the amount of the oil is safe to substitute. This technique works particularly well in quickbreads such as pumpkin bread and banana bread and just contributes to a nice flavor.
