Not Just for Breakfast Egg Tips
Cracking Eggs Cleanly
Crack eggs into a measuring cup or small bowl before adding the eggs to your batter. If bits of shell fall in, it is easier to remove them. It is also better to crack them on a flat surface with a sharp tap - instead of the classic method on the side of a bowl.
Beaten Egg Whites
To help make egg whites fluffier and stiffer when you beat them, add either a pinch of cream of tartar or a dash of salt.
Hard Boiled Egg Tips
Make hard-boiled eggs without cracking the shells. Allow your eggs to warm up to room temperature before you cook them. This can also be done quickly by letting them sit in cold water immediately after cooking.

Worried about food safety when using raw eggs? Either purchase the pasteurized eggs that are now available or use dried egg whites for an important safe raw egg tip.
When to Use Egg Substitute
You can replace a large egg with a quarter cup of egg substitute in most recipes that call for eggs; if it calls for whites or yolks, use real eggs.
